Pro Restaurant Equipment Review
Please Note: 1/4" is pictured in photos. This kit ships in two boxes. You MUST pick a fixed size for the output, this size is not adjustable later on, you will need to purchase an additional attachment head in a different size if you want to cut more than one size.
This meat cutter machine is quite unique, and we have to give props to American Eagle for manufacturing a versatile machine that no one else is really offering. In our own online research there aren't very many machines out there that let you easily shred, cut, or slice meat the way this one is designed to do. You're either stuck with a Meat Grinder or Meat Mincer, or you need to use a Meat/Cheese Slicer which allows you to slice one piece at a time. If you're into preparing ethnic cuisines, stir fry, soups, salads, or any dish that requires freshly cut strips, your only option is to cut it with a knife by hand, or order the meat for your restaurant pre-processed. In our review of the machine, we noted that pretty much everything about the machine is designed for high volume processing, there are no plastic parts in the cutting head, and the blades, shafts, and spacers are all made of stainless steel. Since the shafts are mounted on ball bearings, and the combs are mounted on the bottom, you won't ever really need to worry about feeding in whole pieces of meat. They will go right through the chute and come out the other side fully sliced and ready to cook. If you slice cooked meats, they will be ready to immediately serve. Our test unit was a 1/4" output, and the meat really did come out to 1/4". The blades are spaced slightly more than 1/4" apart to account for the thickness of the blades.
The attachment does have two knobs mounted on one side which allows you to make a fine adjustment to one set of blades and ensure that there is no gap in between the two knife sets. This is important because over the long term, a gap may develop from using the attachment, and if there is a gap in the blades, the meat cutter will not be able to fully cut through the meat anymore, so these adjustment knobs will come in handy to prevent that from becoming a problem.
The blades are enclosed in a frame that allows you to leave the attachment in the motor while removing the stainless steel outer cover. In this way you can spray out the blades for cleaning if you also take caution to not spray water directly onto the motor. The best way to clean though is to follow the manufacturer's instructions and use a tube or wire brush, and hand wash the blades. The components are not dishwasher safe according to the manual.
Despite this inconvenience, we still recommend the machine for how quickly it processes meat. We suggest processing your meat in large batches and then cleaning the machine right after processing, that way you minimize the amount of times you need to clean per day.

Well worth the money!

I had some initial reservations about purchasing this slicer because I'd always relied on deli-type slicers. I'm glad that I took the risk. Twice a week I need to slice up to 50lbs of meat and I was only able to slice about 8-9 pounds at a time and this took up to 90 minutes to do. This machine has cut my slicing time to 1/10th of what it used to be. The feeding chute is a little smaller than I'd like so I have to cut my larger pieces into sizes that will fit in the chute but that's really a moot issue. Meat will also sometimes get stuck between the blade closest to the motor and the adjacent wall but that can be remedied by dropping the meat closer to the opposite side. I initially had a lot of meat bits from shredding and getting hung up in the combs that sit between the blades but if you utilize the following steps it will greatly reduce your waste production:
- Place your meat in the freezer for 1-2 hours to firm it up.
- Every 3-4 passes, shoot a quick spray of Pam onto the
- Make sure that you drop the meat as close to center where
the blades intersect as possible.
After the meat drops through the blades the slices will usually be stuck together. The issue here for me is that I marinate my meat after slicing and with the meat stuck together, the slices can't get fully marinated so I've got to pull them apart on e by one. Again, a moot point and not at all a hindrance because of the time that I save with the speed of this slicer.
Clean-up is a breeze. Just remove the combs and the blades from the housing and spray them down with hot water. A small brass bristled brush will take care of any stubborn pieces that are stuck to the blades. Overall, a wise investment if you do a lot of meat slicing all at once.

Machine work well. I hate cleaning it. The outside shell is easy to clean, but it's harder to clean between the blades with 1/8" size, so I give only 4 star. May order a second one with different size.
Very Sharp Knives

Knives are very very sharp! Great for cutting meat, but need to handle very carefully. Cut my finger trying to clean, so wish it were a little easier to handle. I suggest using protective gloves while washing.
